By combining the flexibility and accessibility of a food truck with the efficiency and comfort of a brick-and-mortar, Pop-Ups Corp is changing the landscape for new business owners and their future customers. Earlier this month, Orlando Decoded had the awesome opportunity to chat with some of the creators of Pop-Ups, tour their manufacturing facility, and visit their very first mobile restaurant in Downtown Orlando. Created by a team of uniquely qualified individuals, Pop-Ups Corp seeks to bridge the gap between food truck dining and brick-and-mortar restaurants. Working Restaurant

Pop-Ups Corp believes in its product so much that they have created a live, working restaurant for aspiring Pop-Up owners (and hungry diners) to experience and explore! This inaugural mobile restaurant, located on West Colonial Drive, features a diverse menu, contemporary decor, and inviting seating options. Come check it out for yourself on Tuesdays-Saturdays from 11am-7pm to see what these Pop-Up restaurants can really do!
Restaurant Design
As we already know, Pop-Ups offer many of the benefits of a brick and mortar location while maintaining the versatility and flexibility of a mobile business. But what exactly does a Pop-Up mobile dining unit offer to its owners and customers? Let’s take a small tour of the currently operating Pop-Ups restaurant to view some of the ingenious design choices that set these restaurants apart from other businesses.
Unique Seating Solutions

Unlike a traditional food truck, Pop-Ups restaurants include innovative seating solutions for more convenient on-location dining. While the exact seating arrangements and appearance may vary from unit to unit, most mobile restaurants include a patio (with fold-out/fold-up capabilities for easy transport) and rooftop seating.

At the working, Downtown Orlando restaurant, the rooftop seating area is actually available for small private events and functions (like baby showers, bridal teas, proposals, team building events, etc). While the space is currently almost completely open to the elements, there are plans to enclose it a bit more for climate control purposes. Kitchen

With state-of-the-art food preparation and storage spaces, Pop-Up restaurants set their clients up for success where it really matters – the kitchen! Tiled floors with an installed drainage system aid in cleanliness and sanitation while walk-in refrigeration and freezer storage allow for increased inventory and diverse menu offerings. The risk of running out of a certain menu item (a very real challenge in the food truck industry) is greatly reduced with this expanded storage.
Hand Washing Sink

In a post-pandemic world, guests are hyper-sensitive to cleanliness and sanitation. Every Pop-Up restaurant offers a diner-accessible hand washing sink. Located near the order window on the unit’s “bottom floor,” these sinks can either be controlled automatically (for contact-free washing) or manually – depending on the needs and preferences of the particular restaurant.
Menu

The Downtown Orlando, working Pop-Up restaurant features a varied menu including burgers, curry chicken, and shrimp tacos. On Fridays and Saturdays, guests can enjoy special jerk chicken or rib meals with delicious dinner rolls.

During my visit, I chose to sample the shrimp tacos. Wow! While I knew to expect high quality food made with high quality ingredients, I was blown away by the flavors and freshness of this dish. The shrimp were marinated and seasoned perfectly and were paired with a coconut dressing that brought the whole meal together. These were some of the best grilled shrimp tacos I have ever tasted, and I will definitely be back to try other dishes.
